It would be nice if you did not sanitize the formfields tags.
I would like to insert in the label tag of a checkbox an a-tag or ul/li-tags.
For safety reasons, your way is certainly correct. I think, normally, custom form fields are created by admin and he has other options to “annoy” his users.
